Jamaican Rice & Peppers dish can bring the flavors of Jamaica in your home. Jamaican Rice and Peas is a traditional dish cooked with beans and coconut milk. In the Caribbean beans are referred as peas. I have made stir fried peppers to serve with this rice. These peppers have a sweet and tangy taste and they add crunch to the soft rice dish.

Ingredients
For Rice
2 cup long grain rice (uncooked)
1 cup red kidney beans soaked and boiled
1 tablespoon olive oil
1 tablespoon butter
4 garlic cloves, minced
1 onion, diced
1 tablespoon celery stem chopped
1 tsp dried thyme
1 small bay leaf
½ tsp paprika
¾ tsp salt
¼ tsp black pepper
3 cups water
1 cup coconut milk
Salt to taste
Celery leaves chopped, for garnishing
For the stir fried peppers
½ cup Green pepper sliced
½ cup red pepper sliced
½ cup yellow pepper sliced
1 large onion sliced
1 tablespoon olive oil
1 tablespoon tomato ketchup
1 tablespoon Worcester sauce
½ teaspoon lemon juice
A few drops of Tabasco
Salt to taste
Celery leaves chopped
Directions
For the Rice
- Wash and soak rice for 10 minutes.
- Heat oil and butter in a pot, add bay leaf and garlic, sauté for 1 minute.
- Add onion and celery, sauté.
- Now add all the dry spices, salt and stir.
- Add the drained rice, sauté for a minute.
- Add the boiled beans and water.
- Stir and cook till half of the water has evaporated.
- Now stir in the coconut milk and cook (add water if required) till rice is cooked.
- Adjust the seasoning.
For the Stir fried peppers
- Heat the oil in a pan on high heat. Add the sliced onions and all the peppers.
- Sauté the peppers on high heat with salt.
- Add all the sauces and lemon juice, stir for a minute.
- Take the pan off the heat.
How to serve
Fill a portion of rice in a bowl and press a little. Now invert it on a serving plate and arrange some peppers. Garnish with chopped celery.
