Falahari Kheere Ki Sabzi (Vegetable dish made from Cucumber for fasting days) is the most simple and quick dish to be prepared. This preparation is made during Navratri and other fasting days (vrat / upvas) when the choice of vegetables are very limited.
For falahari recipes, potato is the most consumed vegetable. During Navratri many of us fast for nine days and get bored with potatoes. This Kheere Ki Sabzi is a good replacement to the aloo ki sabji. Serve it with Singhade ki roti, Singhade ka Cheela or Sabudana khichadi.

Ingredients for Falahari Kheere Ki Sabzi
200 grams cucumber
1 medium boiled potato
1 green chilli slit into 2
1 tablespoon coriander chopped
½ teaspoon lemon juice
1/3 teaspoon red chilli powder
½ teaspoon dhania powder
Salt to taste
1 teaspoon ghee
Directions for Falahari Kheere Ki Sabzi
- Peel and dice the cucumber in cubes.
- Coarsely mash the boiled potato.
- Heat ghee in a pan; green chilli and cucumber are added and sautéed for 2 minutes.
- Add salt, dhania powder, chilli powder and mix.
- Add ¼ cup of water, cover and cook till the cucumber is half cooked.
- Now add the mashed potato and cook till the cucumber is soft and the gravy thickens.
- Switch off the heat. Add lemon juice, coriander and mix.
- Serve hot.
