My family absolutely loves chinese cuisine. Wontons are one of my family’s favourite dishes. Inspired by all the gazillion Wontons I have eaten in my life, this Fried Wonton recipe is as authentic as it can get in its vegetarian form.
Originating from China, Wontons don’t just vary by the types of filling. The most exciting part is the number of shapes one can make. Wonton folding styles are mostly a matter of personal preference. Although, a good idea to vary the shape is by picking according to the type of filling.
To make fried wontons, I have used homemade wonton wrappers, that are stuffed with a filling of your choice and, then deep-fried to a crispy golden brown. This fried wonton recipe is really simple and uses a basic vegetarian filling of aubergine, garlic, ginger and spring onions. It is seasoned to perfection with soya sauce, black bean sauce and salt.
As for the dipping sauces, they are infinitely customizable with few options listed here – chilli oil, a sweet and spicy sauce, or a soy dipping sauce. Serve the wontons immediately with a dipping sauce and enjoy. Once you try these golden crispy treats at home, you’ll want to make them all the time!

Ingredients for fried wontons
20 wonton sheets (recipe here)
Oil for frying wontons
For the filling
2 cups finely chopped aubergine (Brinjal)
1/2 teaspoon minced garlic
1/2 teaspoon minced ginger
1 teaspoon oil
1/2 cup chopped spring onions
1/2 teaspoon black bean sauce
1/2 teaspoon soya sauce
Salt and pepper to taste
Directions for fried wonton
- Make the wonton wrappers according to the recipe. Cover and set aside.
How to make the filling
- Heat oil in a pan; add ginger, garlic and saute for 30 seconds.
- Add Brinjal and saute for 5 minutes on medium heat.
- Switch off the heat and let it cool down to room temperature.
- Transfer in a bowl; add spring onions, black bean sauce, soya sauce, salt, pepper and mix it.
How to Proceed
- Place one wonton wrapper on a flat surface. Keep the remaining wrappers covered so that they don’t dry out. Brush the two edges of the wonton wrapper farthest away from you with water.
- Place 3/4 teaspoon of the filling onto the centre of the wrapper. Fold the wrapper over into a triangle shape, and then bring the two bottom corners together. Use a bit of water to “glue” the bottom corners together.
- Repeat the process with the remaining wrappers and filling.
- In a deep pan; heat oil on medium heat.
- Fry 6-8 wontons at a time until golden brown. Drain excess oil on paper towels. Repeat the process with the remaining wontons.
- Serve immediately with the chilli oil dip.
