This is one of the ways to use passion fruit – I started adding it to my salads – the easiest, fuss-free way to put them to use! Since all salad dressings need to have a sour component, whisking in some of the passionfruit pulp instead of vinegar, imparts a lovely fruity flavour to the dressing. Feel free to use fruits and vegetables of your choice as there are no fixed combinations. Ingredients for Salad with Passion Fruit dressing
For the dressing
2 to 3 passion fruit pulp
1 teaspoon lemon juice
1 tablespoon mint chopped + more for garnishing
1/4 tsp black pepper crushed
1 tablespoon extra virgin olive oil
1 tablespoon honey
Salt to taste
For the salad
1 cucumber peeled and cubed
1 red capsicum cubed
2 cup mixed salad greens/lettuce head
1 pear cubed
1 apple peeled and cubed
1/2 cup cherry tomatoes
2 tablespoon dried cranberries
Directions for Salad with Passion Fruit dressing
- Prepare the dressing by placing all the ingredients in a glass jar, shake until The dressing will be thick and creamy. Refrigerate until you chop the salad. (You can use the pulp along with the seeds or strain by pressing from the back of a spoon to collect all the thick pulp).
- The cucumber needs to be peeled and de-seeded and then chopped into cubes.
- The apple and pear needs to be peeled and then chopped into cubes.
- Cut each cherry tomato into 2 half.
- The salad greens needs to be washed 2-3 times. Remove excess water and dry on a kitchen towel.
- Take a large bowl. Tear the greens into bite-sized pieces.
- Add cucumber, apple, pear, cherry tomatoes and cranberries.
- Add the dressing and toss gently until well coated. Taste and adjust seasonings according to your taste.
- Garnish with a few mint leaves and serve immediately.
