This is healthier and better than the restaurant ones. At home, we can easily control the quantity of oil and add lots of vegetables. It comes together so fast and it’s so filling.
Fried rice has been a kitchen staple of most Asian kitchens for centuries. Everyone has their own family recipe that they swear is the best in the world. The continued popularity of this dish is due to its adaptability and the fact that people almost always cook too much rice and have leftover. Vegetable Chinese Fried Rice is a delicious way to transform leftovers into something delicious!

Ingredients for this Vegetable Chinese Fried Rice
Rice: Choose long or medium grain rice. Jasmine rice is most often used. I have used medium grain rice.
Vegetables: Fresh or frozen vegetables can be used. You can use veggies like carrot, beans, peas, corn niblets, bell pepper, broccoli, cauliflower, asparagus, cabbage and spring onions. I have used carrots, beans, corn niblets and spring onions.
Oil: Sesame, peanut and vegetable oil. I have used vegetable oil along with butter.
Sauces: Soya sauce is the key ingredient. You can also use oyster sauce, miso sauce, Tamari.
How to make Chinese Fried Rice
- Have all your ingredients ready: Since fried rice cooks super quick, it’s important to have all your ingredients ready.
- Get the wok hot:Heat oil on high heat in a large wok or non-stick pan until smoky hot while swirling the oil around.
- Saute the aromatics and vegetables: Add the garlic and onions and stir-fry for 30 seconds or until the onions are slightly softened. Add the mixed vegetables and cook for another 2 to 3 minutes.
- Add rice:Stir in the rice and break up any large chunks with a spatula while tossing until heated through around 2 minutes.
- Flavours and seasoning:Drizzle in soy sauce, vinegar, salt, sugar, pepper and toss to combine everything evenly. Keep stirring the fried rice until slightly toasted.
- Serve: Transfer to bowls and serve hot and garnish with green onions and sesame seeds, if desired.
Tips to make Authentic Vegetable Chinese Fried Rice
- Use a large wok or a non-stick pan.
- Cook the rice aldante. The rice should be individual grains separate. Boil and then cool the rice before making fried rice. Leftover rice works great.
- Do not overdo the flavours and seasonings.
- Do all the cooking on high heat.

Ingredients for Chinese fried rice
3 cups cooked rice
1 and 1/2 cups chopped mix vegetables (carrot, beans, corn)
3 cups cooked rice
1/4 cup spring onions
1/4 cup greens of spring onions
1 tablespoon garlic minced
1 tablespoon soya sauce
1 teaspoon sugar
1 teaspoon vinegar / lemon juice
1/2 teaspoon pepper
1 teaspoon oil
1 tablespoon butter
Salt to taste
Chilli oil to serve (recipe here)
Directions for Chinese fried rice
- Heat oil and butter in a large wok; add garlic and spring onions and saute for 1 minute.
- Add the mix vegetables and saute for 2 to 3 minutes.
- Add in the rice and toss well.
- Now add soya sauce, salt, sugar, pepper, vinegar and toss.
- Garnish with spring onions.
- Serve with chilli oil.
