Bhindi Ki Kadhi (Okra In Yogurt Gravy) is a delicious main course dish. This Kadhi is also made with khatta dahi (yogurt) and besan (gram flour) but instead of the usual pakora’s I have added bhindi to it. The bhindi is marinated and then fried before adding to the Kadhi. This gives a crunch and a bite to the dish.

Ingredients For Bhindi Ki Kadhi (Okra In Yogurt Gravy)
100 grams bhindi
2 tablespoon besan (gram flour)
¼ teaspoon chilli powder
¼ teaspoon amchur
¼ teaspoon salt
Oil for frying
For the Kadhi
2 cups of Khatti dahi (sour yogurt)
1 tablespoon besan (gram flour)
¼ teaspoon haldi (turmeric)
½ teaspoon dhania powder (coriander)
½ teaspoon jeera (cumin)
2 dry red chills
A pinch of hing (asafoetida)
1 teaspoon ghee
For the tempering
1 teaspoon ghee
¼ teaspoon jeera
½ teaspoon chilli powder
1 tablespoon coriander chopped for garnishing
Directions For Bhindi Ki Kadhi (Okra In Yogurt Gravy)
- Wash, wipe and trim both the ends of the bhindi. Cut the bhindi horizontally into two and then cut into 2 inch pieces.
- Add all the ingredients and toss, set aside for 30 minutes to marinade so that the bhindi is well coated with besan.
- For the Kadhi
- Mix yogurt, besan, haldi, coriander, salt and 1 cup water and blend till no lumps are there.
- Heat ghee in a pot; add jeera, red chilli and hing.
- Now pour in the yogurt mix and keep stirring till it starts to boil. Lower the heat and let it simmer for 15 minutes.
- Heat oil in a pan and fry the marinated bhindi till crisp. Drain on absorbent paper. Alternatively you can air fry the bhindi also to cut on oil.
- Check the thickness of the Kadhi, if too thick add more water and boil for 2 minutes.
- Add the fried bhindi, coriander to the Kadhi and switch off the heat.
For the tempering
- Heat ghee in a small pan; add jeera and switch off the heat. Add the chilli powder and pour on the Kadhi.
- Serve with rice or roti.
