Easy Mix Vegetables tastes like the one we get in restaurants but minus an overload of calories. This delicious main course dish has no cream and extra butter added. Generally in the restaurants, vegetables are fried and used but I have air-fried them to get the smoky fried flavour and texture, but without oil.
There is a lot of variations in making mix vegetables. The taste varies depending on the combination of vegetables and the style of cooking. Mix vegetable is made in every household and all the restaurants have it on their menu.
This recipe is my favourite as it is very simple, and made with commonly found vegetables. Try this healthy and nutritious vegetable dish with roti, rice or even with bread and I can bet, you will love it!

Ingredients for Easy Mix Vegetables
2 cups cauliflower
1 cup chopped beans
1 cup chopped carrot
1 sliced capsicum
1 sliced onion
1 teaspoon ginger paste
1 teaspoon garlic paste
1 tablespoon chopped coriander
2 tomatoes pureed
1 tablespoon oil
1 teaspoon cumin
2 red dry chillis
1 bay leaf
1/4 teaspoon turmeric powder
1 teaspoon chilli powder
1 tablespoon coriander powder
Salt to taste
1/2 teaspoon garam masala (optional)
Directions for Mix Vegetables
- Air fry the cauliflower, beans and carrots or deep fry or steam them till half cooked. Set aside.
- Heat oil in a pan; add cumin, bay leaves, dry red chillis, ginger garlic paste and toss for few seconds.
- Add onion, capsicum and stir fry for 2 to 3 minutes.
- Now add the chilli powder, coriander powder, turmeric and stir fry for 30 seconds till the spices are fragrant.
- Add the tomato puree and stir for 2 minutes.
- Add the air fried vegetables, salt and saute for a minute. Add 2 tablespoon water, cover and cook till the vegetables are cooked, but not too soft.
- Switch off the heat, add garam masala and toss.
- Garnish with chopped coriander.
