Soya Aloo Curry (Soya Chunks and Potato Curry) is a delicious dish made with soya chunks / soya vadi and potatoes. Easy to prepare this recipe can be made effortlessly for lunch or dinner. Serve with roti or rice along with salad will make a complete nutritious meal.
Soya chunks are commonly known as soya nuggets or meal maker. Soya is a rich source of protein, fiber, vitamins and minerals. This is a cheap replacement for non-vegetarian options.
To make the chunks flavourful I have added salt and lemon juice while soaking them. I have used boiled potatoes and fried them in Air Fryer instead of deep frying the potatoes to cut down on oil.

Ingredients for Soya Aloo Curry
2 potatoes boiled and cubed
1 cup soybean chunks
1/2 cup dahi / yogurt (optional)
1 teaspoon lemon juice
2 onions cubed
1 tablespoon garlic
1 teaspoon ginger chopped
1/2 cup tomato pureed
1/2 teaspoon jeera (cumin)
2 tej patta (bay leaves)
1 dry red chilli
1 teaspoon kasuri methi (fenugreek powder)
1/2 teaspoon haldi (turmeric)
1/2 teaspoon chilli powder
1 teaspoon dhania powder (coriander)
1/2 teaspoon garam masala
Salt to taste
1 tablespoon oil
Directions for Soya Aloo Curry
- Heat water in a saucepan and bring it to a boil. Add the soy chunks, ½ teaspoon salt and lemon juice and let it boil for 5 minutes. Switch of the heat, cover and set aside for 20 minutes or till the soy chunks become soft drain out the water and keep the soy chunks aside.
- Air fry the boiled potatoes or fry them. This is optional. You can use them as it is also.
- Grind together onions, ginger and garlic to a paste. Set aside.
- Heat oil in a pan, add cumin, tej patta, red chilli and saute them for a few seconds.
- Add the onion paste and saute until light brown.
- Add tomato puree and saute till oil starts to separate.
- Now add kasuri methi, coriander, red chilli powder, turmeric, salt and saute for a minute.
- Pour in the dahi (plain yogurt) and saute for a minute.
- Now squeeze out water from the soya chunks and add to the masala along with the potatoes.
- Toss well and add 2 cups water. Cover and cook for 10 minutes.
- Open and check for the consistency of the curry, adjust the salt and spices to suit your taste.
- Add chopped coriander leaves and mix.
- Serve with roti or laccha paratha.
