Sahjan ke patte ki sabji is a dry preparation made from Moringa leaves. I have used organic moringa leaves for this preparation. I have grown up in the state of Odisha where Moringa is a delicacy. This preparation is known as Sajana Sagaa Bhaja. It tastes best with dal and rice.
As we all know that drumstick is new Super Food of this age but we Indians have been aware of all the goodness this plant contains since centuries. Drumsticks are used all over India in various preparations.
Almost every part of the tree can be used for food and have medicinal properties. The pods are long and thin. They are used in curries, sambar, sabzi, rasam, porridge and soups. Flowers can be used for making fritters or vada’s, cutlets, stir fry and curry. Leaves can be made into a curry, stir fry or cooked with lentils.
Moringa is one of the most powerful natural medicines that are rich in antioxidants, amino acids, vitamin A, potassium, calcium, iron, minerals, proteins and fibre. Has antiulcer, antioxidant, antihypertensive, and analgesic properties.

Ingredients for Sahjan ke patte ki sabji
2 cups leaves of drumstick
4 to 6 pods garlic sliced
2 medium onion sliced
2 green chilli slit
1 teaspoon jeera (cumin)
2 dry red chillies
2 tablespoon oil (mustard)
Salt to taste
Directions for stir-fried drumstick leaves
- Remove only the leaves from the branch. Discard all the thin stems also. Wash thoroughly 2 to 3 times to get rid of grit.
- Place the leaves on a strainer so that all the water is drained out.
- Heat mustard oil in a pan; add cumin, chilli, garlic and stir for a minute.
- Add onion and saute till the onions golden brown.
- Mix the drumstick leaves and saute till it starts to shrinks.
- Now add salt, give a good stir, cover and cook till done.
- Open the lid and saute for 2 to 3 minutes till there is no moisture left.
- Serve.
