Kerala Paratha (Layered Flat Bread) is a crisp flaky paratha. This paratha is also known as Malabar Paratha. Kerala Paratha (Layered Flat Bread) is quite similar to Lachcha Paratha. The difference between the two is that the Kerala parotta as it is commonly known as is made of maida (plain flour), whereas lachcha paratha is made of atta (whole wheat flour).
This is an easy way to make this flaky bread at home. Ingredients for Kerala Paratha
2 ¼ cups maida (plain flour)
1 ½ tablespoon oil
1 teaspoon salt
½ teaspoon sugar
½ cup milk
1 tablespoon yogurt or 1 teaspoon baking powder
Water as required
Ghee/Oil for cooking
Directions for Kerala Paratha
- In a large bowl add 2 cups maida, salt, sugar, 1 tablespoon oil and mix. Now add milk and make soft dough by adding water as required.
- Knead the dough well for at least 5 to 6 minutes on a working surface. Add half of the remaining oil and knead. Now apply rest of oil on top. Cover and rest it for 2 hours.
- Knead again and make equal size ball of desired size. Balls should be little bigger than the big size lemon. Cover and rest for 5 minutes.
- Roll out each ball into thin chapati. Apply ½ teaspoon ghee or oil and sprinkle flour evenly on top.
- Now make pleats like a paper fan with the chapati. Roll it using one end to form a round shape. Dust with flour.
- Roll out again making a round thick chapati.
- Heat a gridle on medium heat, place the paratha and let small bubles appear. Flip the porotha and apply ghee and flip again and apply ghee on this side also. Cook till light pink and crisp.
- Serve hot. Enjoy with Paneer Lababdar.
