Roasted Foxnut is used during fasting days when falahari food is consumed. This is considered as Sattvic or Vedic food. You can serve them for Ekadashi, Navratri, Shivratri, Janmashtami, or any other vrat. This Masala Phool Makhana (Fox Nuts) recipe uses only a handful of spices, and takes only 15 minutes to make a yummy and healthy snack. Of-course you can alter the spices based on your preference, to adapt it to your tastebuds.
Fox Nut, Gorgon Nut, Phool Makhana is an aquatic plant that grows in marshes, ponds, and lakes in the Indian subcontinent. It comes from a plant called Euryale Ferox and mostly grown in the state of Bihar. It is actually puffed lotus seed or puffed fox nut.
Variations to try by changing the seasonings
- Spicy Masala – You can add spice powders such as red chili powder, turmeric powder, chaat masala powder, and salt according to taste.
- Chutney Podi Masala – Add curry leaves and chutney podi in the ghee and sauté.
- Pudina (Mint ) Masala – Add in dry mint powder, salt, pepper, and mango powder.
- Peri Peri Masala – Add some peri peri masala while roasting and stir to mix well.

Ingredients for Roasted Makhana
100 grams makhana (foxnuts)
2 teaspoon ghee/oil
1/2 teaspoon rock salt
Pinch of pepper powder
Directions for making Roasted Foxnut
- Heat a pan; add the makhana and roast on low flame for 15 minute, stirring occasionally.
- Now make some space in the center of the pan; add ghee, salt, pepper and stir the makhana so that they are quoted well.
- Continue roasting for another 5 minutes.
- Switch off the heat and let it cool down.
- Store in an air tight container.
