Churma

Churma is a Rajasthani dish made during festivals and ceremonies. In our house it is compulsorily made during Karwa Chauth Vrat and Ganesh Chaturthi. It is a sweet dish made by coarsely grinding deep fried whole wheat flour dumplings along with sugar. It has a slightly coarse texture and emits the mouthwatering aroma of whole wheat flour roasted in desi ghee.

Choorma is a sweet which is served with dal and relished along with Bati. Dal Bati Churma is an inseparable combination and is very popular. All though this dish is high in calories but you can pamper yourself and your family occasionally.

Ingredients For Churma

1 cup atta (whole wheat flour)
2 tablespoon rava (semolina) optional
¼ cup ghee (clarified butter)
2 tablespoon badam (almonds) sliced
1 teaspoon elaichi powder (cardamom powder)
½ cup powder sugar
Ghee for frying

Directions For Churma

  • In a bowl mix atta, rava, ghee and mix well with your fingertips.
  • Now add very little water to make very stiff dough. Cover and set aside for 10 minutes.
  • Divide the dough into large lemon size portion and press each portion with your fingers to leave the finger marks.
  • In a pan; heat ghee on medium heat and transfer the dough pieces in batches.
  • Fry on low heat till brown and crisp. Drain and set aside to cool a little.
  • Break the fried dough into pieces and transfer to a food processor and grind to a coarse powder.

Churma, Dal Bati Churma

  • Transfer this powder to a large bowl, add sugar, cardamom, almonds and mix well.
  • Serve with dal.
