Bharwa Hari Mirch Ka Achar (Stuffed Chilli Pickle) – This achar is made in Rajasthani style without using many spices. Bharwa Hari Mirch Ka Achar (Stuffed Chilli Pickle) is a simple recipe to make. You can choose any kind of chilli for this recipe. The very thick chills are generally not so hot whereas the small thin ones are very spicy.
We Indians love our pickles and make them all round the year. We have certain pickles that are made in winter and some in summer. Chills are made during winter but can also be made all round the year. This is why this is one of my favourite achar as I like to make them in small batches and finish them by the time they are still crunchy.

Ingredients for Bharwa Hari Mirch Ka Achar
250 grams big green chillis
2 teaspoon sarson dal (big mustard)
3 teaspoon rai powder (small mustard)
3 teaspoon saunf crushed (fennel seeds)
½ teaspoon kalonji (nigella seeds)
3 teaspoon salt
2 tablespoon mustard oil
2 tablespoon lemon juice
1 tablespoon vinegar
Directions for Bharwa Hari Mirch Ka Achar
- Wash the chilies and wipe them dry with a cloth. Using a knife, make a slit in each of them, taking care not to cut in two. Set aside.
- Now mix all the dry ingredients in a bowl. Add half of mustard oil, half lemon juice and mix again.
- Fill all the chillis with this masala mix.
- Add the left over masala if any.
- Now pour the rest of lemon juice, oil and toss gently.
- Transfer in a clean dry glass jar. Pour the vinegar.
- Stir the pickle once every day for 3 to 4 days.
