Aam ka khatta mitha katka achar (Sweet And Sour Mango Pickle) is made with raw sour mangoes. This is a delicious relish or pickle paired best with any stuffed paratha. You don’t have to wait for stuffed parathas only as it can be enjoyed with roti and rice also.
For this pickle, mangoes are cut in very small cubes. The even chopping of mangoes is very for this pickle. Katka refers to the chopping in small cubes, hence the name.

Ingredients For Aam ka khatta mitha katka achar
2 cups chopped fine mangoes
1½ cups sugar
1 tablespoon salt
1/3 teaspoon cinnamon
1 teaspoon chilli powder
1 teaspoon garam masala
1/3 teaspoon haldi (optional)
Directions For Aam ka khatta mitha katka achar
- In a pan; add mangoes, sugar, salt, haldi and stir on low heat till the sugar melts and it starts to boil.
- Increase the heat and cook till the sugar syrup thickens to 1 string consistency.
- Add rest of the ingredients and mix.
- Switch off the heat and let it cool to room temperature.
- Fill in a sterilize jar and enjoy.
