This is an Indian adaptation of popular American Chinese dish. Veg American Chop Suey (Crispy Noodles In Sweet And Sour Sauce) is a vegetarian version and has a good mix of vegetables in a flavorful, sweet and tangy sauce.
Served on a bed of crispy noodles this dish is full of flavours and textures. You can have pan fried noodles instead of deep fried noodles but I like to indulge ones in a while, so this recipe has fried crispy noodles.This fusion Chinese dish is my favourite order in any Indo Chinese restaurant I visit. My memory goes back to my childhood days.
I used to visit my uncle often during holidays at Jamshedpur. He used to take us to United Club for swimming and movies. After swimming I was always very hungry for hogging American Chopsuey. There they use to serve this dish with half fried egg on top. I still think that was the best Veg American Chop Suey I have had till date. I want to go back there and taste this dish again to see if it is the same as 30 years back.
Till I go back to Jamshedpur to have this dish I have put together this recipe. Chopsuey can be easily made at home. You can play with the combination of vegetables of your choice for this dish and it will not disappoint you. The sauces used are simple and always there in our pantry. Ingredients for Veg American Chop Suey
1 packet hakka noodles
1 tablespoon plain flour
1+1 teaspoon oil
½ teaspoon salt
Oil to fry
For the sauce / gravy
1 teaspoon garlic chopped fine
1 teaspoon ginger chopped fine
1 medium onion sliced
1 carrot julienned
1/3 cup beans cut diagonally
½ cup capsicum sliced (red and green)
1 cup cabbage shredded
1 tablespoon spring onion greens chopped
½ cup tomato sauce
1 teaspoon vinegar
1 teaspoon red chilli sauce
½ teaspoon soya sauce (optional)
1 teaspoon ajinomoto (optional)
½ teaspoon black pepper crushed
1 teaspoon corn flour
1½ tablespoon oil
Directions for Veg American Chop Suey
- Heat sufficient water, add salt and one teaspoon of oil and bring to a boil. Add noodles and boil on high heat until 75% cooked.
- Strain and set aside till water has drained completely. Add 1 teaspoon oil and toss. Divide the noodles into 4 batches to fry.
- Heat oil for frying in a pan, sprinkle a little plain flour on the noodles and carefully place in oil in such a way to form a nest. Do not stir. When the nest is firm enough then turn and fry till crisp. Drain on absorbent paper and set aside.
Sauce Preparation for Veg American Chop Suey
- Heat oil in a pan, add ginger, garlic and saute for just 15 secs on high flame.
- Add onions and saute for a minute.
- Add ajinomoto, carrots, beans, capsicum and saute on high flame for 2 to 3 mins.
- Now add cabbage and saute for another 3 minutes.
- Add all the sauces, salt, pepper and toss.
- Mix cornflour in 1 cup of water and to the vegetables.
- Taste the gravy and if desired add more of the sauces as American chop suey is little tangy and sweet.
- Cook the gravy for 2 minutes till it becomes little thick. Switch off the heat and add spring onion greens.
Serving for Veg American Chop Suey
- Arrange a portion of the fried noodles on a plate.
- Pour a portion of the prepared sauce and top with spring onion greens.
- Serve immediately.
