Spicy Stir Fried Tofu With Vegetables is a nutritious dish perfect with rice or even noodles. This very comforting food is a good combination of protein, vitamins, carbs and fibre. To flavour the tofu simply marinate it for 20 minutes. Pan fry the marinated tofu to get crisp texture.

Ingredients For Spicy Stir Fried Tofu With Vegetables
200 grams tofu cut into 1” pieces
1 cup broccoli chopped
1/3 cup carrot diagonally cut
½ cup zucchini diagonally cut
½ cup red pepper diagonally cut
1 tablespoon spring onion green
1 tablespoon ginger Julienne
1 tablespoon garlic Julienne
1 teaspoon rice vinegar
1 tablespoon soya sauce
1 teaspoon sweet chilli sauce
4 dry red chilli broken
1 tablespoon roasted sesame
2 tablespoon corn starch
Salt to taste
2 + 1 tablespoon oil
For the Marinade
¼ cup vegetable stock/water
2 tablespoon corn starch
2 tablespoon soya sauce
1 teaspoon chilli flakes
1 teaspoon brown sugar/honey
½ teaspoon salt
Directions For Spicy Stir Fried Tofu With Vegetables
- In a large bowl mix 2 tablespoon corn starch, sugar, chilli flakes, soya sauce, salt, vegetable stock and mix well.
- Add tofu and mix. Set aside to marinate the tofu for at least 30 minutes.
- Remove the tofu with a slotted spoon and transfer on a plate. Sprinkle 2 tablespoon corn starch and toss.
- In the left over marinade add sweet chilli sauce, soya, and vinegar, salt and set aside.
- Heat 2 tablespoon of oil in a pan; shallow fry the tofu lightly and set aside.
- In the same pan add rest of the oil; add dry chills, onions, broccoli, carrots and saute for 2 minutes.
- Now add the ginger, garlic, pepper, zucchini and saute for 3 minutes.
- Add the tofu and toss.
- Pour in the sauce and cook for 2 minutes and check the seasoning.
- Sprinkle spring onion and sesame.
- Serve with rice or noodles.
