Chayote also known as Chow Chow, pear squash, pear vegetable and closing-palm gourd is neutral in nature and mild in taste. Chayote is a good source of vitamin A, C, amino acids and potassium. It is of the same family as melons, cucumbers and squash. It is also widely grown in Mexico and Latin America. It is used mostly in cooked forms but can also be eaten raw in salads and salsa. They are commonly used in South Asian cuisine to make soups and stir fries.

Ingredients For Chayote Soup with Lemongrass
2 chayote / Chow Chow / Pear Squash / Vegetable Pear peeled and cubed
1 carrot cubed
2 tablespoon tofu
2 tablespoon cilantro
1½ teaspoon Lemon juice
Salt to taste
1 teaspoon oil
Pepper (optional)
For the stock
5 cups water
1 stalk fresh lemongrass sliced
1 inch piece fresh ginger
6 garlic pods
½ cinnamon stick
1 star anise
¼ teaspoon pepper corns
Directions For Chayote Soup with Lemongrass
- In a pot add 5 cups water and bring to boil.
- Combine all the ingredients for the stock in a mortar pestle and bash. Add to the water in the pot and let it boil.
- Reduce heat and simmer for 10 minutes. Strain liquid into a bowl; return to same pot. Discard solids in strainer.
- Bring liquid in pot to boil.
- Heat oil in a pan; add squash, carrot and saute for 2 minutes, add to the boiling stock.
- Now add tofu, salt, reduce heat and simmer until squash are crisp-tender, about 3 to 4 minutes.
- Stir in lemon juice and coriander.
