Akki Roti (Rice Roti or Rice flat bread) is a vegan dish and gluten-free also. A simple flat bread or roti made mostly with rice flour. In India, different kinds of breads are staples of all the 3 meals. No Indian meal is complete without any form of bread whether it is flatbread, puffed bread or like fluffy pancakes.
Akki Roti is a very popular dish in the Indian state of Karnataka. In Kannada, Akki means rice and roti is flat bread. This traditional dish is generally made for breakfast or dinner, but you don’t have to wait for any meal to enjoy it. Akki roti is typically served with chutney for breakfast but can also be served with some gravy for dinner to make it filling.
This recipe is very simple and made with few ingredients easily found at home. The only requirement is rice flour as this is the main ingredient. This dish is so flexible that you can play with the rest of the ingredients as per availability or to your liking. I have made this Akki Roti (Rice Roti or Rice flat bread) traditionally by using dill leaves, coriander and curry leaves.
Tips for making Akki Roti
- Use freshly ground rice flour- By saying this I don’t mean that it has to be made instantly, but it should not be older than a month.
- Chop all the vegetables finely so that the dough can hold them together easily.
- Flavour the dough well as rice flour needs good flavouring.
- Always use hot water while making the dough.
- Use water little by little as it will be difficult to roll a very wet dough.
The method of making these delicious rotis is also quite easy. You will need either plantain leaves, a moist muslin cloth or a soft cotton cloth, greased butter paper or a plastic sheet. Unlike other chapatis or rotis, akki rotis aren’t rolled with a pin but patted with hands instead.
There are many versions of this recipe. The roti turned out crispy at the edges and soft from within and tasted great. This is my tried and tested recipe that I have put together after eating in many restaurants and at some of my friend’s place. I hope you love it! Ingredients for Rice Roti
1 cup rice flour
1 teaspoon jeera
½ cup finely chopped dill leaves
1 tablespoon finely chopped coriander
1 tablespoon finely chopped curry leaves
2 finely chopped green chillies
1 medium onion finely chopped onions
¼ cup grated fresh coconut
1 teaspoon finely chopped ginger (optional)
Salt to taste
1 cup boiling water
Oil or ghee
Directions for making Akki Roti
- In a bowl add rice flour, jeera, and salt and mix well.
- Add in all the fresh chopped ingredients and mix well.
- Now make a well in the middle and add half of the hot water. Then, slowly mix in the batter from the sides by adding water little by little to make a semi-soft dough.
- Make a big ball of dough. Smear a bit of oil on the outside of the ball. Cover and rest for 10 minutes.
- Now divide the dough into 4 or 5 portions. (Note: 1 cup of rice flour should yield about 4 to 5 lemon-sized balls for making rotis.)
- Heat a tawa or griddle on medium heat grease it with oil and keep it ready.
- Now take a plastic sheet or a piece of parchment paper or a silicone mat, and apply oil with a brush or hand on it.
- Place a ball of dough and spread it evenly and as thinly as possible. You can grease your fingers with oil to make spreading easier. Make a hole in the center of the roti as it will help in cooking it well. This is totally optional.
- Gently pick the mat and flip it over the hot tava and slowly peel off the mat leaving the roti on the griddle.
- Let the roti cook until the edges start to dry out and then flip over and drizzle some oil all over the roti. Let it cook for another minute or so.
- Flip again and drizzle some more oil along the edges of the roti. Cook till the desired colour is attained and remove.
- Similarly, make all the roties. Enjoy your Masala Akki Roti hot with butter and your favourite chutneys!
