2 cups all-purpose flour (Maida)
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup hot water
2 tablespoon instant coffee
½ cup vegetable oil
1 teaspoon cinnamon powder
1/3 cup walnuts chopped
1¼ cups brown sugar
1 tsp white vinegar
For the glaze
4 tablespoon icing sugar
2 teaspoon water
Directions for Cinnamon Coffee And Walnut Cake
- Pre-heat the oven to 180 deg.
- Add coffee to the cup of hot water, stir and set aside.
- In a bowl, sieve together flour, baking powder, soda, salt and set aside.
- In a large bowl add oil, cinnamon, walnuts and mix.
- Now add brown sugar and mix and then add hot coffee.
- Add 1 tsp vinegar and mix well.
- Gradually add the dry ingredients to the wet ingredients and fold gently till just incorporated well. Do not over mix.
- Pour the batter into the prepared cake tin and bake at 180 deg C for 35 to 40 minutes or until a skewer inserted in the center comes out clean.
- Let the cake cool completely.
- Mix icing sugar and water and whisk till smooth paste is formed. Drizzle with a spoon or a fork on the cake and serve.
