Sizzling Jamaican Platter with Jerk Cottage Cheese (Paneer) & Jamaican Rice brings the flavors of Jamaica in your own home!
Jerk is a style of cooking native to Jamaica. A very hot spicy mixture called Jamaican jerk spice is used for marinating. This is a spicy, sweet, tangy seasoning which can be used to grill meat, Tofu, Paneer and vegetables. Jamaican Rice and Peas is a traditional dish cooked with beans and coconut milk. In the Caribbean, beans are referred as peas. This is a very flavorful dish and wholesome dish.

Ingredients
Marinade for Paneer
½ cup spring onion, coarsely chopped
6 garlic cloves
1 tablespoon ginger, chopped
2 red fresh chilli
2 green chilli
2 tablespoon lemon juice
2 tablespoon olive oil
2 tablespoon dark soy sauce
1 tablespoon Worcester sauce
3 tablespoon brown sugar
2 tsp salt
½ tsp nutmeg powder
½ tsp dried thyme
2 tsp black pepper
1 tsp cloves
2 cinnamon sticks
250 grams paneer cut into big square pieces
For Rice
2 cup long grain rice (uncooked)
1 cup red kidney beans soaked and boiled
1 tablespoon olive oil
1 tablespoon butter
4 garlic cloves, minced
1 onion, diced
1 tablespoon celery stem chopped
1 tsp dried thyme
1 small bay leaf
½ tsp paprika
¾ tsp salt
¼ tsp black pepper
3 cups water
1 cup coconut milk
Salt to taste
For the stir fried peppers
½ cup Green pepper
½ cup red pepper
½ cup yellow pepper
1 large onion sliced
1 tablespoon olive oil
1 tablespoon tomato ketchup
1 tablespoon Worcester sauce
½ teaspoon lemon juice
A few drops of Tabasco
Salt to taste
To serve
A cast iron sizzler plate.
Spring onion greens chopped
Celery leaves chopped
Directions
Rice
- Wash and soak rice for 10 minutes.
- Heat oil and butter in a pot, add bay leaf and garlic, saute for 1 minute.
- Add onion and celery, saute.
- Now add all the dry spices, salt and stir.
- Add the drained rice, saute for a minute.
- Add the boiled beans and water.
- Stir and cook till half of the water has evaporated.
- Now stir in the coconut milk and cook till done (add water if required) .
- Adjust the seasoning.
Cottage cheese (Paneer)
- Make a paste of all the marinade ingredients in a food processor. (Except cottage cheese)
- Now marinate the cottage cheese pieces coating well.
- Leave to marinade for at least 2 hours.
- Place the cheese pieces on a hot grill and turn after some time.
- Brush the remaining marinade and grill till grill marks appear on all sides.
For the Stir fried peppers
- Heat the oil in a pan on high heat. Add the sliced onions and all the peppers.
- Saute the peppers on high heat with salt.
- Add all the sauces and lemon juice, stir for a minute.
- Take the pan off the heat.
How to serve
- Heat a cast iron sizzler plate.
- Arrange a few cabbage leaves.
- Now fill a portion of rice in a bowl and press a little. Now invert it on the hot plate.
- Arrange the cottage cheese pieces and some stir fried peppers. Garnish with greens of spring onion and chopped celery.
- Enjoy!
Note: You can serve in a plate also.
