Oats & Vegetable Soup is a very quick and healthy soup ready in just few minutes. Oats used in the soup gives a body and texture to the soup. The chopped coriander brings freshness and colour to the soup. This soup is liked even by those who don’t really like oats.

Ingredients for Oats & Vegetable Soup
2 to 3 tablespoon of quick cooking Oats
1 carrot diced
8 to beans chopped
½ cup cauliflower chopped
4 to 6 baby corns sliced
1 teaspoon garlic chopped fine
½ teaspoon ginger chopped fine
1 tablespoon coriander chopped
1 Green chilli slit in 2
1 teaspoon lemon juice
Salt and pepper to taste
2 teaspoon olive oil
Directions for Oats & Vegetable Soup
- Heat the oil in a pot; add chilli, ginger, garlic and sauté for 30 seconds.
- Add all the vegetables and sauté for 1 minute.
- Stir in 4 cups of water, add salt and boil till the vegetables are half cooked.
- Add the oats and boil till vegetables are done.
- Switch of the heat add pepper, lemon juice and coriander.
- Serve hot.
