Pickled Ginger (Kacchi Adrak Ka Achaar) is a simple and easy pickle to make. The only time required is for chopping. For this pickle we need tender ginger also known as spring ginger without fiber. Made with few ingredients this is ready in just 24 hours unlike other pickles.
Tender or Spring ginger is young ginger. It has the same handlike shape of the mature root, but rather than tough and fibrous, it is juicy and plump, with a pink blush. Mild and tender enough to eat raw in salads, it has an almost translucent skin that is so thin it doesn’t need peeling.

Ingredients for Pickled Ginger
100 grams tender / spring ginger (Kacchi Adrak)
3-4 green chillies chopped
Juice of two lemons
1 and 1/2 teaspoon salt / rock salt or to taste
Directions for Pickled Ginger
- Peel and wash the ginger.
- Cut into thin juliennes.
- Mix all the ingredients together.
- Transfer in a glass jar.
- It is ready in 24 hours.
- Keep in the refrigerator and can be used for 1 month
