Instant Rice And Rava Chakli / Rava Murukku / Sooji Chakkuli is any time snack that can be made in huge batches for festivals and gatherings. They also come in handy when you are travelling for a couple of days. Made with few ingredients easily found in our pantries, these deep-fried festive savouries are delicious and can be stored for weeks in an airtight container.
Chaklis can be made with besan, a combination of dal flours (lentil flour) and atta (wholewheat flour). This chakli is made with Rava and rice flour. There is no roasting or grinding to be done. It is very simple and quick to make a batch of this delicious and crisp snack. Made a big batch for this Diwali! All my friends and family loved it so much.

Ingredients for Rice and Rava Chakli
1 cup fine rava/suji (semolina)
2 cups rice flour
1 and 1/2 to 2 tablespoon butter
1/2 teaspoon white til (sesame)
1/2 teaspoon black til (sesame)
1 teaspoon jeera (cumin)
1/2 teaspoon haldi powder (turmeric)
1 teaspoon red chilli powder
1 teaspoon black pepper powder
A pinch of hing (asafoetida)
1 teaspoon salt / to taste
Oil for frying
Direction for Rice and Rava Chakli
- In a pan boil 2 cups water, add butter, salt, white and black sesame. Stir to mix.
- Add rava and stir to combine. When it comes together like a dough switch off the heat.
- Add jeera, chilli powder, haldi, pepper and mix.
- Add rice flour and mix.
- Make a soft dough by adding very hot water. (I have used approximately 1/2 cup water.) Set aside for 15 minutes.
- Grease the chakli mould, place the star shape mould plate in it. Place small portion of dough.
- Make chakli on butter paper.
- Heat oil on high heat; drop a few chaklis at a time. (Don’t overcrowd them, else they will break).
- Once the chakli rises up, reduce the heat and fry in medium to low heat till golden.
- Remove excess oil and place on absorbent paper to cool.
- Store in a airtight container.
