Broccoli Cheese Soup is very flavorful soup. This soup is quite easy and quick to make. This thick and creamy soup is absolutely perfect comfort food. This recipe allows you to control the tenderness of the broccoli, either keeping it more on the crisp side or simmering it until it is super soft.
I have retained the bite in the broccoli to keep the freshness alive. Although this soup is very creamy there is no cream added. The soup is made lighter by adding milk instead. Cheddar cheese packs the soup with colour, flavour, perfect creaminess and richness.
Broccoli Cheese Soup is great for big gathering on special occasions. Serve in a bread bowl with a nice crusty baguette to be dipped in this cheesy broth.

Ingredients for Broccoli Cheese Soup
1/2 cup onions chopped fine
1 tablespoon garlic minced
1 cup carrot grated
2 to 3 cups broccoli separated into florets
1/2 cup cheddar /processed cheese grated
1/4 cup flour
2 cups milk
2 to 3 cups vegetable stock
1 teaspoon Dijon mustard/mustard powder
1/2 teaspoon freshly-cracked black pepper
1/2 teaspoon paprika /cayenne (optional)
2 tablespoon butter/olive oil
Salt to taste
Directions for Broccoli Cheese Soup
- Heat butter (or oil) in a large pot over medium heat; add onion, garlic and sauté for 5 minutes, stirring occasionally, until the onion is translucent.
- Stir in the flour and sauté for 2 to 3 minutes, stirring till you get the aroma.
- Now pour in the vegetable stock on low heat; stir until it is evenly combined.
- Increase the heat and stir until it starts to boil.
- Stir in the milk and continue cooking until the soup reaches a simmer.
- Add in the broccoli and cook for 3 minutes.
- Add in carrot and cook until the broccoli reaches your desired level of tenderness.
- Add salt, pepper, paprika, dry mustard powder and optional cayenne.
- Stir in the cheese until melted and incorporated fully.
- Transfer soup to bowls, garnish with reserved cheese, and serve immediately.
