Black Beans and Mango Salsa Taco, is inspired by my fondness for mangoes and Mexican food. Being an Indian, Mexican food is very close to my heart and I find ways of making vegetarian dishes with these familiar ingredients. Mangoes are my weakness, whether ripe or unripe, I just love them. Black beans provide lots of soluble and insoluble fiber — both of which can decrease your risk of many chronic diseases and help you stay fuller, longer.
This Taco is bursting with textures and flavours. The sweet and sour taste of half-ripe mangoes along with coloured peppers provides a perfect crunchiness to the dish. The soft mashed black beans / refried beans are good healthy fillings for the tacos. The creamy guacamole dip provides softness and freshness to this taco. This makes a healthy, nutritious meal for our family.

6 corn tortillas (recipe here)
1 cup refried beans / black beans (recipe here)
1 cup mango salsa (recipe here)
1/2 cup creamy guacamole (recipe here)
1 tablespoon chopped cilantro
Lemon wedges to serve
Directions for Black Beans and Mango Salsa Tacos
- Prepare the tacos, corn salsa, refried beans and guacamole as per the recipe.
- Heat a pan; and slightly warm your tortillas.
- First generously spread the fillings of refried beans, approx about a tablespoon.
- Now a layer of mango salsa and then a tablespoon of creamy guacamole sauce.
- Top it up with cilantro/coriander leaves.
- Serve the tacos immediately.
