Aam Ka Meetha Achar (Mango Pickle – sweet) is our family’s favourite. I have grown up eating this sweet and tangy mango pickle. Aam Ka Meetha Achar is a simple recipe made with few ingredients. This achar has ingredients that are easily found in the kitchen.
As a child I use to love this pickle with Namak Ajwain Ki Poori. Even my friends loved Aam ka Meeth Achar that I often had in my lunch box. I use to carry extra pickle for my friends as we shared food with each other.
In Rajasthan every house hold makes this pickle. This is my mother’s recipe I am sharing here. This summer I was with her, and so made this pickle under her supervision. It will last for good one year or more if stored in a clean dry jar.

Ingredients for Aam ka Meetha Achar
1 kg raw mango
750 grams sugar
2 tablespoon salt
1/2 teaspoon haldi (turmeric powder)
1 tablespoon chilli powder
1 teaspoon fennel (saunf)
1/2 teaspoon kalonji (nigella seeds)
1/4 teaspoon Hing (asafoetida) – optional
Directions for Aam ka Meetha Achar
- Wash and peel the mangoes. Chop in cubes along with the hard shell.
- Discard the seed which is inside and wipe clean the cubed mangoes.
- Add all the mangoes, sugar, salt and haldi in a Kadai and set aside till it starts leaving water.
- Now put to cook on medium heat, till mangoes are cooked and has a bite. At this point the sugar syrup should be lightly sticky also.
- Now add rest of the ingredients.
- Switch off the stove.
- Cool and store in a clean glass jar.
