Beans Aloo ki Sabzi (French Beans and Potato mix vegetable) is a simple everyday dish. This healthy and delicious Sabzi is best made during winter, when the market is full of tender beans fresh from the farms. This Sabzi is made using few dry masalas. It takes just few minutes and the dish is ready if the beans are tender and fresh.
Today I have harvested beans from my balcony garden. I have just 10 to 12 plants in pots but this time I am having a bumper yield. These beans are grown organically without much effort. I must say Nature is very kind. With hardly any effort I have been rewarded immensely.

Ingredients for Beans Aloo ki Sabzi
500 grams beans
200 grams aloo (potatoes) chopped
1/2 teaspoon jeera
1 teaspoon red chilli powder
2 teaspoon coriander powder
1/2 teaspoon turmeric powder
1 teaspoon amchoor/lemon juice
2 teaspoon oil
Salt to taste
Directions for Beans Aloo ki Sabzi
- Chop and remove both the ends of all the beans. De thread them if required. Wash and pat dry.
- Chop into ½ inch pieces.
- Heat oil in a pan; add jeera and let it splatter.
- Add beans and aloo (potatoes). Saute for a minute.
- Add salt, turmeric and saute to mix. Cover and cook till almost done.
- Now add rest of the dry masalas and saute on high heat for the masalas to roast and all the moisture to evaporate.
- Switch off the heat and add lemon if using.
- Serve hot with roti or rice.
