Refried Beans Taco is one of my all-time favourite dishes. These vegetarian tacos will please almost anyone who shares a love for Mexican food. 

A great taco possesses the following qualities: something hearty (beans), something creamy (avocado), something crisp (shredded cabbage), something tangy (pickled onions) and lots of fresh garnishes with lemon and cilantro. These tacos are busting with all these qualities.

The best part is everything used for this recipe is made from scratch with all fresh ingredients. In addition to being yummy and delicious, these tacos are healthy too.

Ingredients for Refried Beans Taco

6 taco shells (recipe here)
1/2 cup refried beans (recipe here)
1/2 cup pickled onions (recipe here)
1 avocado sliced
Lemon wedges
1 teaspoon Cilantro springs
Salt to taste

Directions for Refried Beans Taco

  • Prepare the tacos, refried beans and pickled onions as per the recipe.
  • Fill each taco shell with refried beans.
  • Arrange a few slices of avocado and shredded cabbage.
  • Sprinkle salt and drizzle lemon juice.
  • Garnish with a spring of cilantro leaves.
  • Enjoy!!!
