Ingredients for Crisp Spinach Raita
2 cups yogurt
1 teaspoon sugar
1/2 teaspoon roasted cumin powder
1/4 teaspoon chilli flakes / powder
Salt to taste
For the pakori
3 tablespoon besan (gram flour)
A pinch of red chilli powder
1 teaspoon ajwain (carrom)
1 tablespoon chopped coriander leaves
Salt to taste
For the crackling spinach
4 tablespoon spinach thinly chopped
Directions for Crisp Spinach Raita
For the Pakori
- Take 2 cups of water in a bowl, add 1/2 teaspoon salt and set aside for soaking the pakories.
- Mix all the ingredients for the pakori in a bowl.
- Add water to form a thick batter. Whiskto make it smooth and fluffy.
- Heat oil in a pan; drop very small portion in the hot oil and fry the pakori on medium heat.
- Dip in the salted water to soak.
- Let them soak for 10 to 15 minutes.
For the crackling spinach
- In the hot oil fry the spinach in medium hot oil till crisp. Drain the excess oil by spreading on paper napkin and set aside.
For the Raita
- Whisk the yogurt in a bowl.
- Add salt, sugar, half of chilli and cumin to the yogurt and mix well.
- Gently squeeze the pakori and add to the yogurt, mix.
- Transfer to a serving bowl and sprinkle rest of chilli flakes, cumin.
- Place the crisp spinach on top and serve immediately.
