Chaulai Channa Dal ki Sabzi (Amaranth And Gram Dal Sabzi) is delicious and extremely healthy dish. Made with ingredients commonly found in our kitchens, this Sabzi is packed with folic acid, vitamins and fiber. I have made this saag with chana dal to add protein to the dish.
Amaranth / Chaulai / Cholai is less popular than other green leafy vegetables like spinach, fenugreek, mustard etc. Inclusion of any of the green leafy vegetable in your diet daily will help to stay healthy. In the rural India chaulai grows on its own or as weed in the farms. We have grown this in our community garden and today harvested with so much of joy.

Ingredients For Chaulai Channa Dal ki Sabzi (Amaranth And Gram Dal Sabzi)
500 grams chaulai (Amaranth)
½ cup chana dal (Gram Lentils)
½ cup onion sliced
2 tomatoes chopped fine
1 teaspoon ginger garlic paste
2 dry red chillies
1 teaspoon jeera (cumin)
2 tablespoon ghee/oil
½ teaspoon haldi (turmeric)
½ teaspoon chilli powder
1 teaspoon dhania powder (coriander)
A pinch of asfoetida
Salt to taste
Directions for Chaulai Channa Dal ki Sabzi (Amaranth And Gram Dal Sabzi)
- Pressure cook the dal with a pinch of salt till firm but just cooked. (Dal will further get cooked with chaulai bhaaji). Set aside.
- Remove the hard or very thick stems of the saag and wash thoroughly. 2 to 3 times to get rid of grit.
- Chop finely and set aside.
- Heat ghee/ oil in a pan; add cumin, chilli, onions, ginger garlic paste and saute for 2 minutes.
- Add the tomatoes, salt and saute till the mushy.
- Add haldi (turmeric powder), chilli powder, coriander powder and saute.
- Now add the cholai (Amaranth) and saute for a minute.
- Add in the boiled dal (lentils) and toss.
- Cover and cook till done.
- Serve.
