Rajgira Ki Poori (Amaranth Puffed Bread) aka Rajgira Aloo Poori is very easy to make. This delicious poori is made from Rajgir Atta (Amaranth Flour). Amaranth Flour / Rajgira ka atta is one of the ingredients that is used during fasting days specially when only Falahari food is consumed. This poori can be served with Curd, raita, aloo sabji or any other sabji of our choice.
Amaranth flour is one of the most protein-rich of any plant-based food. While many of the most commonly consumed grains contain gluten, amaranth is naturally gluten-free and can be enjoyed by those on a gluten-free diet.
Rajgira Aloo Poori tastes really great and hence you can make this puri even during regular days, instead of just fasting days. If you don’t want to add potatoes, you can make it plain too.

Ingredients for Rajgira Ki Poori
1 cup amaranth flour+ extra for rolling
½ cup boiled potatoes mashed
1 teaspoon ginger and green chilli paste
2 tablespoon coriander chopped fine
Salt to taste
Oil for frying
Directions for Rajgire Ki Poori
- Mash the boiled potatoes.
- Add Rajgira flour (Amaranth Flour) to the mashed boiled potatoes.
- Add ginger paste, green chilli paste, coriander chopped fine and salt.
- Make firm dough by adding very little water if required. Cover and set aside for 10 minutes.
- Knead the dough again and make lemon size balls.
- Roll each ball into small round disk like poori with help of flour.
- Fry on medium heat on both the sides to light brown color.
- Drain on an absorbent paper.
- Serve with vegetable of your choice and dahi (curd).
