Spinach soup (Palak Soup) is full of vitamins and iron. This cream of spinach soup recipe or palak soup is a very healthy recipe made with spinach, potato, onion and garlic. This creamy soup is made without any cream. To keep this low in calories I have used low fat milk. To make the soup wholesome top with Croutons but this is totally optional. Add a punch by freshly crushed pepper corns to this heartily warming soup.
Enjoy this flavorsome spinach soup with all the goodness of fresh spinach. I have used freshly harvested spinach from my balcony garden. I could not think of a better way to use this organically grown spinach. Celery is always there in my balcony, so added a few stalks in the base of the soup.

Ingredients for Spinach Soup
2 cups spinach chopped
2 onions sliced
2 teaspoon garlic
2 medium potato peeled and grated
1 stalk celery chopped
2 teaspoons olive oil
2 cups milk
Black pepper (freshly ground, to taste)
Pinch of cayenne pepper (optional)
Salt to taste
Bread croutons to serve
Directions for Spinach Soup
- Heat a of spoon oil in a pot, add garlic, onions and saute till soft.
- Add potatoes, celery and saute for a minute, pour 1 cup water and cook till the vegetables are mushy. Cool and blend.
- Heat rest of the oil in the same pot, add spinach and saute till it shrinks. Pour in the pureed vegetables and let it come to a boil.
- Pour in the milk, crack pepper, cayenne pepper and add salt to taste. Let the soup simmer for 3 to 4 minutes.
- Serve with bread croutons.
