Molho Apimentado sauce is from Brazil, Latin America which is well known for it’s spicy, hot, flavorful foods. Also known as Malagueta Hot Sauce, these are made from Malagueta Peppers or green bird chilies. One can use other red chili peppers (if you can’t find malagueta peppers) that are available at your place and the same I have done to share this recipe.
This ideal for seasoning, marinating, using as a dip and simply enjoying. The amount of spice depends on your personal touch. This sauce is common in Brazil. It is so delicious you can eat it with pretty much anything you like.

Ingredients for Molho Apimentado
1 red bell pepper chopped
1 medium onion chopped
2 plum tomatoes chopped
1 or 2 red chili peppers chopped
1 teaspoon ginger grated
2 tablespoon lemon juice
¼ cup extra virgin olive oil
2 tablespoons vinegar
1 tablespoon parsley / cilantro
breadcrumbs (optional)
Salt to taste
Directions for Molho Apimentado
- In a food processor add bell peppers, onion, tomatoes, chili, ginger, salt, vinegar and puree to a smooth paste.
- Heat oil in a heavy pan on medium heat, add in the purée and stir for a while.
- Reduce heat and simmer, stirring occasionally, until most of the liquid is evaporated about 8 to 10 minutes.
- Cool to room temperature. Deg-laze with lemon juice.
- Finely chop the parsley / cilantro and sprinkle over the sauce. Serve immediately.
Notes
- If you are not going to use the sauce immediately, store it in a container with a vacuum-sealed lid in the refrigerator for no longer than one month.
- Use a tomato variety appropriate for sauce. Make sure they are red and ripe.
