Pan Fried Sriracha Noodles are my favourite. This amazingly tasty noodle dish is actually quite simple and quick to prepare. Most of the ingredients are commonly found in the pantry except for Sriracha sauce. Sriracha is a spicy chilli sauce with a unique flavor. If you find it difficult to get then you can use a spicy red chilli sauce instead. The flavor will be a little different but I assure you, you will still enjoy this preparation of noodles.
I have used a lot of vegetables, cut into very thin sticks/ match sticks. It is very important to cut them thinly, so that less cooking time is required and veges remain crunchy. Another very important thing is to get the wok and oil very hot. For this recipe I have pan fried the noodles separately before adding them to the vegetables. By doing so the noodles become a little crisp and dry. They absorb the flavors well. I have used sesame oil as it has a nutty flavor but any other oil can be used.
These savory noodles are perfect as a meal in itself with lots of colorful vegetables. The bok choy and the spring onion greens are as fresh as can be; as I plucked them from my Balcony Garden just before I started to cook.
Gardening has meditative properties and gives immense joy. It is not difficult to grow green leafy vegetables and herbs. Give it a try and I assure you, you will want to cook more often.

Ingredients For Pan Fried Sriracha Noodles
2 bundles noodles boiled as per instructions
1 carrot thinly sliced into matchsticks or ribbons
1 capsicum sliced into thin strips
½ cup baby corn sliced into thin strips
1 large onion sliced into thin strips
1 small bunch of bok choy separated
2 tablespoon greens of spring onions
1 tablespoon garlic thinly sliced
4 teaspoons sesame/vegetable oil, divided
For the sauce
1 tablespoon soy sauce
1 tablespoon rice vinegar
2 teaspoons sriracha sauce
1 teaspoon brown sugar
2 teaspoons sesame oil
1 teaspoon salt

- Cook the noodles as per the instructions on the packet and set aside.
- In a bowl mix all the ingredients for the sauce, give a good stir and set aside.
- Heat 1 teaspoon oil in a large pan or wok on high heat; add noodles and cook for 2-3 minutes without stirring, until bottoms are slightly browned.
- Flip over, add 1 teaspoon oil and cook for another 2 to 3 minutes. The noodles will become dry and a little crisp. Set aside.
- Heat a wok on high heat; add rest of the oil. Add garlic and saute for few seconds, add onions, baby corns, capsicums and saute for a minute.
- Now add carrots, bok choy and saute till the leaves start to shrink.
- Add the noodles along with sriracha sauce mixture. Toss well with a tong or chopsticks, until noodles are entirely coated. Adjust the seasoning to your taste.
- Add the spring onion greens and serve.
