Torai Aur Sabut Moong Ki Sabzi (Ridge Gourd With Green Gram) is a delicious curry made from ridge gourd (turai/torai) and whole moong. This turai recipe is a healthy and nutritious dish that is simple and quick to make.
This recipe has just dry spices added to it. There is no use of onion and garlic in this satvik recipe. I have used ghee instead of oil and I highly recommend ghee for a better flavor and taste. The addition of lemon juice will add a punch to this sabzi.
Ridge Gourd also known as Luffa acutangula, Sponge Gourd and Chinese Okra to name a few. It has immense health benefits. It is a good antioxidant, has very few calories and contains lots of fiber.

Ingredients For Torai Aur Sabut Moong Ki Sabzi
½ cup green whole moong
500 grams turai (ridge gourd)
½ cup tomatoes chopped
1 teaspoon coriander chopped
1 teaspoon lemon juice
1 dry red chilli / green chilli slit
¼ teaspoon haldi (turmeric)
1 teaspoon dhania powder (coriander)
½ teaspoon chilli powder
½ teaspoon garam masala
1 teaspoon jeera (cumin seeds)
A pinch of hing (asafoetida)
Salt to taste
1 tablespoon ghee
Directions For Torai Aur Sabut Moong Ki Sabzi
- Pressure cook the moong and set aside. It should just be cooked but not mushy.
- Peel and cut the torai in cubes.
- Heat ghee; add jeera, dry red chilli, hing, torai and saute for 2 minutes.
- Add salt and all the dry masalas except garam masala and cook for 3 minutes.
- Now add tomatoes, stir and cook covered until half cooked.
- Stir in the moong, cover and cook till the torai is cooked.
- Check the spices and the consistency. Adjust to your taste.
- Add lemon juice, garam masala and mix.
- Garnish with coriander.
- Serve with roti.
