So to enjoy the authentic taste of Mumbai here is a simple recipe that you can make at home in no time. All you need is some vegetables, pav bhaji masala, Pav Buns commonly known as Ladi Pav and not to forget the star of the dish, “Butter”.
This dish is a good evening snack or can be had for dinner. It is also a great dish for serving a large gathering, for children’s birthday party and even in the lunch box.

Ingredients for Pav Bhaji
½ cup capsicum chopped fine
1 cup mix of vegetables boiled (carrot, green peas, cauliflower)
2 to 3 boiled potatoes mashed
2 to 3 tomatoes chopped fine
½ cup onions chopped fine
1 tablespoon ginger garlic paste
1 tablespoon coriander chopped
1 teaspoon lemon juice
1 tablespoon kasuri methi (dry fenugreek powder)
1 teaspoon dhania powder (coriander powder)
1 teaspoon Kashmiri red chilli powder
1 teaspoon jeera powder (cumin powder)
3 teaspoons pav bhaji masala
¼ teaspoon haldi (turmeric optional)
A pinch of red colour (optional)
A pinch of hing
Salt to taste
1 teaspoon oil
3 tablespoon butter

6 pav buns
1½ teaspoon butter
3 pinches of pav bhaji masala
Directions for Pav Bhaji
- Heat a pan, add 1 teaspoon spoon butter, add capsicum and saute for 1 minute, add garlic paste and saute for 1 minute.
- Add the boiled vegetables, tomatoes, potatoes, kasuri methi and mix and cook for 4 minutes.
- Now add 1 tablespoon butter, pav masala, Kashmiri mirch, coriander powder, jeera powder, salt and mash with potato masher to make a paste like. Add 1 cup water and cook on low heat.
- In another pan, add oil, butter, onion, coriander, red colour, pav bhaji masala and saute till onions are soft. Add 2 tablespoon water and saute.
- Now add the onion mix to potato mixed vegetable paste and mash again with the potato masher to mix everything well.
- If required add more water as the consistency of the bhaji should be semi liquid.
- Check the seasoning and adjust to your taste.
- Switch off heat and add lemon juice and fresh coriander leaves.
- Cut the buns into 2.
- Heat a tava, add ½ teaspoon butter, a pinch of pav bhaji masala and mix.
- Now coat 2 buns and just warm them. Make all similarly.
- Serve with the bhaji garnished with chopped onions and lemon slices.
