Sevaiyan Kheer (Vermicelli And Milk Pudding) is a delicious dessert. This kheer or payasum is a traditional and a very popular sweet that is easy to make. It is a very simple recipe requiring few ingredients. You just need milk, sugar, vermicelli and nuts. I like to flavor the kheer with cardamom powder and saffron. You can use rose water or kewra water also.
Known as sevaiyan, semiya or seviya it resembles spaghetti but the taste and prepration is totally different.

Ingredients for Sevaiyan Kheer
1 liter milk
½ cup sevaiya (vermicelli)
½ cup sugar (a little less if you like less sweet)
¼ teaspoon cardamom powder
1 tablespoon cashew broken
1 tablespoon kismis (raisins)
2 teaspoon ghee (clarified butter)
Directions for Sevaiyan Kheer
- Keep the milk to boil in a sauce pan.
- Ones it starts to boil lower the heat and continue to boil.
- Heat ghee in a pan; add cashew and fry till golden, then add raisins and saute for a few seconds, drain and set aside.
- In the same pan add savaiya and saute till all the golden brown. Switch of the heat.
- Add to the boiling milk gradually and continue to boil on low heat till the milk is 1/3 reduced.
- Add sugar and continue to boil till the kheer is of desired consistency keeping in mind that the kheer will thicken as it cools.
- Switch off the heat; add cardamom powder, cashew and raisins.
- Serve hot or cold.
