Stuffed Lychee In Mango Rabri (Stuffed Lychee In Thickened milk With Mango) is very easy to make. I have thickened the milk which needs no efforts. Only effort required is for taking out the seeds from the lychee while keeping the shape intact for stuffing. This sweet dish can also be enjoyed during fasting.
Few ingredients are required to make this flavorful fruity dish. You can also call it as Litchi Sandesh or Sondesh float. Use good quality mangoes for making the puree. I have used Alphonso mangoes, but you can use any other variety which is easily available. You can also use tinned mango pulp and canned lychee if desired. The stuffing for the Litchi is made with Chenna or paneer (cottage cheese) which is mildly sweetened and flavoured with rose water.

Ingredients For Stuffed Lychee In Mango Rabri
1 litre milk
3 to 4 tablespoon sugar
1 tablespoon rose water
1 cup mango puree
For Lychees
10 lychees peeled
½ cup mashed paneer (cottage cheese)
1 to 2 tablespoon sugar
1 teaspoon rose water/pinch of cardamom powder
Saffron for garnish (optional)
Directions For Stuffed Lychee In Mango Rabri
- Boil milk and reduce to half.
- Add sugar and boil till reduced to approximately 300 ml.
- Set aside to cool.
- Add mango puree, rose water and mix. Refrigerate for 3 to 4 hours.
- In a plate add paneer, rose water, sugar and mash by the heel of your palm to soft and smooth.
- Remove the seeds from all the lychees taking care not to break apart the lychee keeping the shape intact.
- Stuff the lychees with the paneer (cottage cheese) mixture.
- Add to the rabdi.
- Serve chilled garnished with saffron.
I would like to see a video or knife which you ysed to remove seed from lychee. It would be quite helpful. The recipe looks incredible. But when i try the lychee doesn’t remain intact. So would love to learn that part
