Millet And Vegetable Pattie Sandwich is delicious and healthy too. This Pattie is packed with goodness of fresh herbs and foxtail millet along with vegetables. Foxtail millet is also known as Kangni in Hindi, kaon dana In Bengali and in Southern India it is called by different names such as navane, korralu, thinai, kavalai and kambankorai.
This is a simple recipe that can be made quickly and easily. Wheat footlong bread can be used for making this sandwich. Feel free to use as much vegetables and dressing in the sandwich.

Ingredients For Millet And Vegetable Pattie Sandwich
4 hotdog buns/ 1 baguette cut into 5-6 inch pieces
2 onions sliced
8 lettuce leaves
Olives (optional)
Cheese slice (optional)
4 tablespoon mustard sauce
6 tablespoon cold slaw / mayonnaise
4 tablespoon tomato ketchup/ hot chilli sauce
For the patties
½ cup foxtail millet (kangni) soaked for ½ hour
½ cup onion chopped fine
½ cup capsicum chopped fine
1 tablespoon garlic minced
1 tablespoon coriander chopped fine
1 tablespoon celery leaves chopped fine
1 tablespoon parsley chopped fine
1 teaspoon chilli flakes
1 teaspoon oregano
Salt to taste
Oil to shallow fry
Directions For Millet And Vegetable Pattie Sandwich
- Wash the millets. Add 1 cup water and pressure cook for 2 whistles. Let the steam get released and then open the cooker. Fluff up the millets with a fork.
- Grind half the quantity of the cooked millets coarsely.
- In a large bowl transfer both the millets, and all the vegetables and mix.
- Now season this with the spices mentioned and mix.
- Check the seasoning.
- Make patties according to the size of the bun. The patties should be1 inch thick. You can make 2 smaller patties also instead of one big Pattie.
- Heat a nonstick skillet or pan and shallow fry till golden on both the sides.
- Cut the bun horizontally into two and butter the lower piece.
- Place lettuce, slices of onion and sauce.
- Now place the patties, a dollop of cold slaw, hot chilli sauce and cover with the top piece.
- Serve.
Note: You can use any vegetable to the millet for making patties. Also feel free to use your favourite sauces and vegetables in the sandwich.
