Chole Palak With Khada Masala (Chickpeas Spinach Curry) is another variation of chole cooked with palak and whole spices giving this dish a nutty flavor. This dish is full of nutrition as it is packed with iron, protein and dietary fibre. When served with rice or roti and yogurt makes a complete and satisfying meal.
I have used onions and garlic but this can be made in Jain or Sattvic way and trust me it will taste equally good.

Ingredients For Chole Palak With Khada Masala
1 cup chole boiled (check peas)
1 cup palak chopped and blanched (spinach)
½ cup tomato pureed
1 tablespoon oil
1 teaspoon jeera (cumin)
2 bay leaves
2 cloves
1 inch piece of cinnamon
1 piece of mace
1 star anise
½ cup onions chopped
1 green chilli chopped
1 teaspoon garlic paste
1 teaspoon ginger paste
1 teaspoon kasuri methi powder
1 teaspoon chilli powder
2 teaspoon coriander
½ teaspoon haldi
1 teaspoon jeera powder
1 teaspoon amchur (dry mango powder)
Salt to taste
Directions For Chole Palak With Khada Masala
- Heat oil in a pan; add jeera, bay leaves, cinnamon, cloves, mace, star anise and saute for 30 seconds.
- Add onion, green chillis and saute till translucent.
- Now add garlic, ginger, kasuri methi, chilli, coriander, haldi, jeera powder, amchur, salt and saute for 2 minutes.
- Add blanched palak and saute for 2 minutes.
- Now add tomato pure and saute for a few minutes.
- Add the boiled chole and cook till all the spices and palak are well cooked about 15 minutes on low to medium heat.
- Adjust the gravy and seasoning.
- Serve with rice and roti.
