Cajun Vegetable Penne Pasta is my favourite pasta dish. This Cajun Vegetable Penne Pasta is a hearty meal with loads of vegetables. This dish is loaded with onions, peppers, broccoli and zucchini. Well flavoured with Cajun spice mix, basil and cheese, this recipe is low in fat.
Cajun spice mix consist of a blend of salt with a variety of spices, most common being cayenne pepper and garlic. The spicy heat comes from the cayenne pepper, while other flavors come from paprika, onion powder, garlic powder, basil, oregano and more. I have used store-bought Cajun Spice Mix, but one can also make Cajun Spice at home.
I have used penne pasta but you can use any other pasta of your choice. You can even play with the combination of vegetables.

Ingredients for Cajun Vegetable Penne Pasta
250 grams boiled penny pasta
½ sliced onion
1 cup mixed peppers
½ cup zucchini
½ cup broccoli separated
A few leaves of basil
1 tablespoon garlic minced
1 tablespoon Cajun spice
2 to 3 tablespoon tomato ketchup
2 to 3 tablespoon cream
½ cup grated cheese
Salt to taste
1 tablespoon olive oil
Directions for Cajun Vegetable Penne Pasta
- Heat oil in a pan; add garlic and saute for 2 minutes.
- Add onions, broccoli and saute for 2 to 3 minutes.
- Now add red and green bell peppers (capsicum), zucchini and tomatoes.
- Now add Cajun spice, salt, cream and half the cheese and cook.
- Add basil leaves and mix.
- Add boiled penne pasta, toss and mix well.
- Switch off the heat.
- Serve with sprinkle of remaining cheese.
