Gobhi Shimla Mirch sabzi (Cauliflower Capsicum vegtable dish) is a simple and easy North Indian style dry curry recipe using cauliflowers and bell peppers. Cauliflowers and capsicums go well together and this stir-fried sabzi is very easy and quick to make.
This dish is easy to cook, is delicious and goes well with rice and roti. Often cauliflower is fried for this recipe but I have air fried it instead of frying. With the winter setting, we get fresh cauliflower and capsicums although these days all the vegetables are available throughout every season.
Cauliflower is one of the vegetables that I have that in my fridge all the time. If it is about to finish, it becomes part of shopping list for next weekend grocery shopping. As per the sabzi name, main ingredients are cauliflower and green bell pepper (capsicum). Onions along with tomato puree is also added to the dish which adds some texture and taste.

Ingredients for Gobhi Shimla Mirch
250 grams cauliflower
1 cup capsicum cubed
1 onion sliced
2 to 3 tablespoon tomato puree
1 teaspoon ginger paste
1 teaspoon garlic paste
1/2 teaspoon haldi
1 teaspoon chilli
2 teaspoon dhania
1/2 teaspoon garam masala
1 tablespoon oil
salt to taste
Directions for Gobhi Shimla Mirch
- Either Air-fry the cauliflower or Shallow fry the cauliflower in a pan.
- Heat oil in a pan; add jeera, onion, ginger, garlic. Stir for 2 to 3 minutes.
- Add capsicum, cauliflower and Stir for few minutes.
- Now add haldi, dhania, chilli, salt, garam masala, tomato puree and stir to mix.
- Cover and cook till the vegetables are cooked.
- Serve garnished with coriander.
