Ajwaini Tamatari Bhindi (Okra In Tomato Carom Sauce) is a flavorful dish generally made by frying lady fingers. To cut on oil I have air fried them but believe me there is no compromise in taste.
Ajwain / Carom seeds is also known as Bishops weed, has many health benefits. It is used both in cooking and as an important ingredient in many medicines.

Ingredients For Ajwaini Tamatari Bhindi
300 grams bhindi (Okra/ Lady Fingers)
1 teaspoon ajwain crushed (carom)
1 teaspoon garlic paste
1 medium onion sliced
2 tomatoes pureed
2 tablespoon yogurt
¼ teaspoon haldi (turmeric)
½ teaspoon chilli powder
1 teaspoon dhania powder (coriander)
Salt to taste
Directions For Ajwaini Tamatari Bhindi
- Wash and wipe the bhindi. Trim both the ends and remove. Cut the bhindi into two length wise.
- Air fry the bhindi or deep fry them.
- Heat oil in a pan; add crushed ajwain, garlic, onion and saute.
- Add dhania, haldi, chilli and saute for a minute.
- Now add the tomato puree and saute till oil starts to come out.
- Add the bhindi, salt and saute for 2 minutes.
- Add yogurt and saute for 2 minutes and then cover and cook till the yogurt is well incorporated with the bhindi.
- Serve, garnished with coriander leaves.
