Foxtail Millet And Herb Patty is healthy and delicious snack. This Patty is packed with a combination of fresh herbs grown in my balcony. This is a simple vegetarian healthy kebab/kabab recipe that can be made quickly and easily. This recipe does not call for corn starch or bread crumbs for binding as I have coarsely grounded half of the millet to make it easier for binding.
I have made these tikki (patties) by air frying them, but you can also shallow fry them. Both ways it is equally tasty. You can serve these kabab with salad and ketchup by the side.

Ingredients For Foxtail Millet And Herb Patty
½ cup millet
½ cup onion chopped fine
½ cup capsicum chopped fine
1 tablespoon garlic minced
1 tablespoon coriander
1 tablespoon celery leaves
1 tablespoon parsley
1 teaspoon chilli flakes
1 teaspoon oregano
Salt to taste
Oil to shallow fry
Directions For Foxtail Millet And Herb Patty
- Wash the millet. Add 1 cup water and pressure cook for 2 whistles. Let the steam get released and then open the cooker. Fluff up the millet with a fork.
- Grind half the quantity of the cooked millets coarsely.
- In a large bowl transfer both the millets, and all the vegetables and mix.
- Now season this with the spices mentioned and mix.
- Check the seasoning.
- Divide the mixture into medium size balls and flatten them to make patties.
- Air fry them also in a preheated air fryer by brushing the patties with oil.
- You can also heat a nonstick skillet or pan and shallow fry till golden on both the sides.
- Serve with salad and ketchup.
