Spanish Rice is simple, delicious and the perfect side to any Mexican dish like tacos or enchiladas. This dish is made from white rice, tomatoes, garlic, onions, capsicum and a few spices.
The secret of making a perfect Spanish rice lies in the sautéing of the rice with the vegetables. The rice has to be sautéed till it changes colour and starts browning. This is the perfect time to add liquid to cook the rice. This is my favourite rice dish I love to cook often.

Ingredients For Spanish Rice
1 cup rice washed
1 tablespoon garlic chopped
½ cup onions diced
½ cup capsicum diced
1 tablespoon coriander chopped
1 tomato peeled and diced
½ cup tomato puree
2 cups water or vegetable stock
½ teaspoon chilli flakes
½ teaspoon roasted cumin powder
1 teaspoon oregano
Salt to taste
2 tablespoon olive oil
Directions For Spanish Rice
- Heat oil in a pan; add garlic, onion and saute for 2 minutes.
- Add capsicum, rice and saute for 3 to 4 minutes until rice starts to change colour.
- Add all the spices, salt, tomato and toss.
- Stir in the tomato pure and water, bring it to boil, reduce the heat and cover and cook.
- Stir gently ones in between and cook till all the water is absorbed and rice is cooked.
- Switch off the heat and let it rest for 5 to 10 minutes.
- Sprinkle coriander and serve.
