Mexican Salad with Nacho Chips is a healthy appetiser, great to taste and enjoyed by all age groups. This visually appealing snack has a good mix of textures. The crunchy and colourful vegetables, soft feta cheese, crisp nachos with tangy salsa and yogurt dip are in perfect harmony with each other.
It is a great party snack and has never failed to impress my friends. The salad is easily put together before serving without spending much time in the kitchen if you have all the ingredients ready in advance.
I have used Homemade Nachos, Salsa dip and Yogurt dip for which I have provided the link to the recipes. All these can be made a couple of day in advance. Salsa and yogurt dip refrigerate well for 4 to 5 days and the nachos stay well in an airtight container for 15 days. If you want you can use store bought ones also.

INGREDIENTS FOR MEXICAN SALAD WITH NACHO CHIPS
Nacho chips recipe here
2 tablespoon yogurt dip recipe here
4 tablespoon salsa dip recipe here
½ cup onion cubed
½ cup red and yellow capsicum cubed
1/3 cup green capsicum cubed
1 cup tomato deseeded and cubed
½ cup lettuce chopped
2 tablespoon spring onion chopped
1 tablespoon coriander chopped
½ cup feta cheese or cottage cheese cubed
1 teaspoon tabasco
½ teaspoon paprika
1 teaspoon lemon juice
Salt to taste
DIRECTIONS FOR MEXICAN SALAD WITH NACHO CHIPS
- In a large bowl transfer all the vegetables and feta cheese.
- Add lemon juice, salt, paprika, Tabasco and toss.
- Transfer in a serving bowl, top with salsa dip and yogurt dip.
- Arrange the nacho chips all around and serve.
