Vegetable Quesadilla is a classic Mexican dish. This cheesy treat is one dish meal made with tortilla (roti or flat leavened bread), vegetables and lots of cheese. Quesadilla can be baked or pan fried.

Ingredients for Vegetable Quesadilla
8 tortillas recipe here
1 cup refried beans recipe here
1 cup salsa dip recipe here
½ cup yogurt dip recipe here
1 cup cheddar cheese grated
For the vegetable filling
1 onion sliced
1½ cup peppers sliced thin (red, yellow, green)
1 tablespoon coriander chopped
1 teaspoon lemon juice
1 teaspoon cumin powder
½ teaspoon paprika/ chilli flakes
Salt to taste
1 tablespoon olive oil
Directions for Vegetable Quesadilla
For the vegetable filling
- Heat oil in a pan; add onions and peppers and saute for 2 minutes.
- Add rest of the ingredients and toss. Set aside.
How to proceed
- On a tortilla spread 2 tablespoon of refried beans.
- Spread 3 tablespoon of the vegetables.
- Spread 1 tablespoon salsa on top.
- Sprinkle 2 tablespoon cheese.
- Cover with another tortilla and press gently.
- Heat a skillet, lay the quesadilla and roast on both the sides by applying oil.
- Cut into 4 wedges and serve with sour cream and salsa on side.
