Macaroni & Coconut Salad is refreshingly delicious salad. It is a healthy, wholesome salad, best served straight out of the refrigerator. This is a very easy and a simple salad recipe, liked by children and adult equally.
This is a unique salad using coconut and elbow pasta (macaroni). The salad does not use any fancy dressing, cream or mayonnaise, thus making it a healthy dish. Made with very few basic ingredients, this salad is a show stopper. For this recipe I have use fresh cucumbers, red ripe tomatoes, onions and fresh grated coconut. Macaroni salad is seasoned with salt, sugar, pepper, lemon juice and celery. You can use parsley, coriander and mint also for this salad.
The recipe is very special to me as I have very fond memories. It was my sister’s wedding and I had made this salad for reception dinner, almost 25 years back. It was a big gathering of around 700 people. This salad was relished a lot and was much appreciated by the quests. It was the super hit dish of that evening!

Ingredients for Macaroni & Coconut salad
1 and 1/2 cups macaroni boiled
1/2 cup tomatoes diced without seeds
1/2 cup cucumber diced without seeds
3/4 cup onion diced
1 tablespoon celery/ coriander chopped
1 cup scraped coconut (grated fine)
1/2 teaspoon white/black pepper
1 tablespoon sugar
1 tablespoon lemon juice
Salt to taste
Tabasco sauce optional
Directions for Macaroni Salad
- In a large mixing bowl place the macaroni, add all the ingredients and toss well.
- Check the seasoning.
- Keep covered in fridge for at least 1 hour before serving.
- Serve chilled.
